I keep reading this quote and it makes me laugh every single time. I think the visual of falling face first into a box of doughnuts does me in. And it's so true. I choose to eat unhealthy. It's not a slip. It's a choice.
It's been just over a week since I've committed to getting healthy and fit again and while I totally struck out with starting 21 Day Fix Extreme last week, I did work hard at starting and sticking to meal planning. And the hard work paid off...I lost 2 pounds. How did I do it? Well I started by planning out my family's dinners each night and then I planned out my lunches. I measured and portioned everything out and while I didn't calorie count, I still kept a food journal of everything I ate.
I also made sure to drink 2 litres of water each day and I did not snack on any treats (healthy or not) after the kids went to bed. While I didn't start the 21 Day Fix Extreme as planned, I did try to do a couple of rounds of this no-equipment workout I found on Pinterest. So all in all, I had a stellar first week. I can't wait to see what this week brings!
Confession: I love homemade chicken stock (broth). Growing up, my Nonna (grandma) would make us soup made from homemade broth and little star pasta. Sometimes it had pieces of chicken, leftover from making the broth, or sliced up carrots from the pot. Other times, we'd sprinkle Parmigiano-Reggiano cheese in the broth for an added punch of flavour. In our family this "soup" cured everything: the flu, a common cold, tummy aches, a cold rainy day. You name it, soup was the answer.
So it's been my mission to try and master my Nonna's chicken stock recipe and I have finally, after years and years of trying, found my groove and let me tell you, it's making this whole healthy and fit lifestyle I've tried to covet a lot easier. There's nothing more comforting than a mug of hot chicken broth to get you through the evening when you're out of calories for the day. Or if you're like me, trying to detox after a night of eating nacho's!
